Sad news over the weekend from Paolo Dungca:

“After much reflection, my partners and I have made the decision to lovingly close this chapter of our journey together at Hiraya and Kayu. As we each explore new directions, we find ourselves called toward different visions. What we built together is something I will always deeply cherish — a space rooted in storytelling, cultural pride, and soulful Filipino hospitality.

I want to extend my deepest gratitude to everyone who has been part of this remarkable journey. To our team, our guests, our collaborators, and our mentors — thank you. Your belief, support, and generosity brought this dream to life in ways I could never have imagined.

Together, we achieved milestones that still take my breath away: @hirayadc blossoming into the city’s most-sought haven for modern Filipino flavors—hello, cult-favorite Makulay Latte by @sunandstarscoffee , a @beardfoundation nod — @kayu.dc being named one of @washingtonpost Best New Restaurants by @tomsietsema ; and, above all, a vibrant community that welcomed and celebrated Filipino food. That, more than anything, is the legacy I treasure most.

Our final service at Hiraya and Kayu on H Street will be on June 30. Until then, we’ll continue doing what we love — cooking with heart, welcoming you with warmth, and sharing our culture one dish at a time.

This isn’t goodbye — just a pause. I’m already dreaming of Kayu’s next chapter in NW DC, where we can continue telling our stories with the soul and spirit they deserve.
