Stable coming at you on H Street, NE with some delicious looking hot cocktails

“At Stable, D.C. ‘s only Swiss restaurant, owner and beverage director Silvan Kraemer has added hot cocktails to the drink list, echoing the deep roots of warm libations enjoyed in his home country during the colder months. The hot drinks stay true to the “all things Swiss” mantra at Stable, utilizing spirits produced in Switzerland and harkening back to classic winter cocktails historically enjoyed there. Stable’s hot cocktails are available at dinner on Thursday through Saturday and at weekend brunch on Saturday and Sunday.

“In Switzerland, we do have four proper seasons, but with the mountains and snowy winters, we have long colder months, so there is a rich tradition of hot cocktails”, says Kraemer. “Whenever we go hiking or skiing, we bring hot cocktails to warm us up. Obviously, après ski is a big thing now, but that really is an old Swiss tradition of drinking warm cocktails in the winter that took on its own life. At its core, it’s about something that brings comfort during the cold times.”

The lineup of warm drinks includes several cocktails with an origin story traced back to Switzerland. Kafi Schnaps ($11) made with nescafe, sugar and a choice of Plum, Pear Williams or Kernobst Schnapps is what Kraemer calls a poor person’s drink. Farmers used what they had to make schnapps using the “bad” fruit from their harvest and, without access to a coffee maker, utilized instant coffee and a bit of sugar to sweeten the drink. Also on the hot cocktail list are classic Swiss drinks including Jägertee ($10) featuring spiced Stroh Rum, hot water and lemon; Schümli Pflümli ($11) with coffee, sugar, plum schnapps and whipped cream; and Glühwein ($10), a traditional mulled red wine and it’s counterpart, White Glühwein ($10), made with spiced white wine and apples.

Other hot drinks include the popular Spiked Apple Cider ($10) laced with bourbon, goldschlager, amaretto, and allspice dram; Schoggi Twist ($10), Stable’s Swiss take on the hot chocolate, featuring Godiva Chocolate Liqueur, peppermint schnapps, and Caotina Hot Chocolate, all topped with whipped cream; and Holdrio ($10) made with plum schnapps, rose hip tea, and orange.

Stable’s warming drinks can be enjoyed in their idyllic indoor chalets (private structures built into their dining room during the pandemic) designed to evoke winter in the Swiss Alps, or on their H Street Streatery, which is equipped with heat lamps and blankets for guests to cozy under. Completing the picture-perfect cold weather scene is Stable’s warm, bubbling fondue featuring their signature blend of Schlossberger Old, Schlossberger Young and Vacherin cheeses, cooked with garlic and white wine; an interactive raclette feast made on a tabletop grill and served with accoutrements for smothering with the melted cheese; and hearty plates of Swiss comfort food including Cheese and Apple Spaetzli, Stable Rösti topped with heirloom tomatoes, raclette cheese, and Alto Adige Speck, and Venison Loin with spaetzli, braised red cabbage, and caramelized chestnuts.

Stable is open for dinner on Thursday through Saturday from 5-10 PM and brunch on Saturday and Sunday from 10 AM to 2 PM. Reservations are available via Resy.
