Good news for Pho lovers in Glover Park. The folks at Sprig & Sprout have passed their final inspections and are now hiring and training staff. They are hoping to open the week after Thanksgiving. Initially they plan on opening the “fast and casual main floor” then two weeks later will open the upstairs bar and full service dining area. You can see their menu here.

Glover Park officially becomes home to Slate Wine Bar + Bistro today at 4 pm when the highly-anticipated new restaurant opens its doors to welcome friends and neighbors looking to share some of the best quality food and wine around.

Slate Wine Bar Owner and Wine Director, Elizabeth Banker, says, “The Slate team has been working tirelessly to transform this space into a welcoming and comfortable wine bar and restaurant. We are excited to share what we have worked so hard to create and to add to the diversity of Glover Park’s dining options.”

The two uniquely Slate creations are the wine list and the bistro menu. The wines have been hand-selected by Elizabeth, with input from Bar Manager Noah Naft, and focus on smaller production wines from family-owned estates that practice sustainable or organic farming and take a hands-off approach to winemaking. Banker explains, “The primary reason for this focus is experience having shown me that wines that fall into this description tend to be wines with an identity and character that makes them memorable. Of course, some wines made it on to the list by simply being delicious!”

For non-wine lovers, Slate has a great selection of cocktails and craft beers.

The wines complement the bistro menu created by Journeyman Chef and General Manager Mark Krieger. The menu features everything from light snacks to cheese plates, heartier fare including a wide selection of unique salads, panini and the Clean Slate burger, and entrees including steak frites and salmon. Desserts are hand-made by Lester DC’s “Pie King” in Slate’s kitchen. Menu items focus on using the best possible ingredients and simple preparations that showcase the ingredients. The menu will change seasonally and will be supplemented by daily and weekly specials from the freshest local ingredients.

Slate will offer daily wine features, flights, and pairing advice. Slate will also host a wide-range of educational and entertaining wine events, including winemaker dinners, tasting seminars, wine clubs, escorted trips to wine regions, and more.
