Hill East Burger Quietly Opened and Dear God in Heaven It Looks Good

From an email:

“Over the weekend we quietly opened Hill East Burger at 1432 Penn Ave SE. We’re pleased to be serving up good old-fashioned hamburgers w/ a smoky twist, stiff cocktails, and ice-cold beers to our neighbors in Hill East.

The smoked burger has been a recent fascination among Texan pitmasters and we’re pleased to introduce DC to our version, in a cozy space with some Southwestern flair. We look forward to serving as a place for neighbors to gather and grab a bite and a beer, and perhaps pick a song on our beautifully restored 1959 Seeburg 222 jukebox

Hill East Burger is a project between Chris Svetlik (Republic Cantina), Joe Neuman (Sloppy Mama’s BBQ), and Ben Alt (industry vet who was recently at Martha Dear and Tail Up Goat)

Our burgers all feature very high quality beef, utilizing a blend of Sloppy Mama’s prime brisket trim + Roseda Farms dry-aged beef. All the patties are cold-smoked in-house before being smashed on the griddle. An early customer favorite is ‘the Puebla’, featuring smoked poblano relish, beefonaise (beef tallow mayonaise), smoked cheddar, mustard and arugula on either a local potato bun or a bed of dressed arugula

Our bar program is led by partner Ben Alt and focuses on stirred classics with some savory & Southern turns, as well as a menu of mostly local beers and canned wines. We’ll soon be rolling out a list of 40 sipping spirits, including a number of rare bottles picked up in Mexico, such as a mushroom-infused charanda (Mexican rum)

We are now open 7 days/wk, 5-11p Mon-Fri and 12-11p Sat-Sun (kitchen closes at 10p each day)
