“Whaley’s Launching Fuyu, a shabu-shabu pop up this winter”

“In December Whaley’s will undergo a seasonal transformation and become FUYU for the winter months, offering Chef Daniel Perron’s take on shabu shabu.

Shabu Shabu is literally a centerpiece of Japanese cuisine. Each table will feature a hot-pot of simmering broth – house-crafted dashi or red miso – so diners can create their own meal family-style. Given Whaley’s focus on pristine seafood, the FUYU menu will showcase both fish and shellfish, along with premium meats. Examples include:

Bigeye tuna
Wild American shrimp
Day boat scallops
Monkfish
28 Day dry aged grass fed beef
Heritage breed pasture raised pork

All can be ordered as bundles or a la carte, and will be accompanied by seasonal vegetables and traditional Japanese condiments. Diners will be presented with house made udon noodles to eat with the seasoned broth at the conclusion of the meal.

Along with Whaley’s oysters-on-the-half-shell and seafood towers, the menu will include shareable binchotan charcoal grilled, tempura plates and other dishes including:

Fluke Crudo, Fukushu Kumquat, Ikura Roe
Sunchoke Okonomiyaki, Benton’s Bacon, Kimchi Mayo, Katsuobushi
Monkfish Katsu Sando, Japanese Mustard, Cabbage, Tamarind “Tonkatsu”
Spiny Lobster, House Made Udon, Sea Urchin Broth

FUYU will offer a daily happy hour from 5:00 to 7:00 pm with $1 River Keeper oysters, plus a selection of cocktails and snacks all under $10. Snacks include togarashi spiced chips, tempura sea beans and smoked black cod rillette.

Beverage Director Brian Zipin has created a special beverage menu for FUYU with emphasis on Japanese cocktails, sake, beers and a curated selection of cider, sparkling & still wine. The FUYU bar cart highlights a distinct selection of Japanese spirits which can be poured on the rocks or crafted into cocktails including:

Roku Gin, Shiso, & Japanese Cucumber
Ohishi Japanese Sherry Cask Whiskey, Plum & Seven Spice Shrub

The name FUYU evokes winter in Japan; light festivals are highlights of the season. To honor this tradition, designer Brian Miller has adorned the space with more than one hundred paper lanterns floating above the dining room.

FUYU is launching in partnership with inKind, a House Account platform with thousands of members in the Washington DC area who are dedicated to discovering new food and experiences. An inKind House Account allows guests to prepay for meals in advance and receive up to 30% in bonus credit.

FUYU will premiere in mid-December and run through mid-March, when Whaley’s will return to regular service. FUYU will be open Monday to Saturday from 5:00 to 10:00 pm and Sundays from 12:00 to 9:00 pm. Happy hour is available 5:00 to 7:00 pm daily. Potomac Harmony is Back! Following a gap year of competing, then virtual rehearsals during the pandemic, followed by the well-earned retirement of our long-term director, a year of a director search, Potomac Harmony hit the regional contest stage in Concord, North Carolina in March for the first time since 2018! It was exhilarating, reaffirming, and rewarding!

The chorus hit all of its goals, the biggest of which was to have fun and sing our best on contest stage — we did both! Because we earned a score over 400 points, our new Director, Allison Lynskey, was awarded the Novice Director award, photo above. Additionally, one of our charter members, Jackie Bottash, was nominated for and honored with the Leadership Excellence award. It was a celebratory weekend!

What’s next? So much! We now look forward to upcoming performances, growing our membership, and expanding our musical product with new arrangements and an education component each week. It’s an exciting time to be part of this ever-growing ensemble!
