“Chef Quinten Frye brings his take on classic Mexican Tortas, small bites and desserts to Songbyrd Café located at 2477 18th Street NW in DC’s Adams Morgan neighborhood on Monday, February 1 from 5-10 p.m.

Frye is a James Beard award semi-finalist, who, prior to his stint as executive chef at Big Bear Café, opened an award-winning venture in Hawaii called Cocina Modern Mexican. Cocina exemplified Frye’s ability to cook authentic regional cuisine in a new locale, gaining him greater recognition not only in Hawaii, but also in culinary magazines across the country. He brings this expertise to Songbyrd with this pop-up.

The menu includes small bites ($4-$8) such as chips & salsa, guacamole with house fried chips; roasted chiles, red onion lime and grapefruit; papas fritas with tajin queso fresco, toasted garlic and homemade hoanero ketchup; Mexican street style corn with lime mayo, chili powder, cilantro and Cotija cheese and friend avocado with creamy cabbage slaw, Valentina and pickled jalapenos.

Tortas ($12 each) include grilled citrus marinated chicken with avocado, tomatillo and cilantro slaw; red-chile pork with dried chiles, tecate simmered pork shoulder, cucumber escabeche and queso fresco; ‘tree hugger’-rajas, squash, mushrooms, cilantro pesto and goat cheese; crispy chicken with apple pico de gallo, charred orange mayo and red cabbage; headcheese carnitas with poblano-orange salsa, pickled jalapenos, cotija (add crispy pig ears at an additional $2); tortaguesa made with Roseda farms dry aged beef burger, tex-mex queso and avocado; and pickled jalapenos, with caramelized onions (add sunny side up egg for an additional $1). Desserts ($2.75-$5) include Horchata flan, Mexican chocolate chip cookies and jarritos,

Special Guest Mixologist Dan Searing — owner of Room 11, founding member of DC Craft Bartenders Guild and author of The Punch Bowl: 75 Recipes Spanning Four Centuries of Wanton Revelry, will be serving tequila punches and more in the Music House.”
