“José Andrés Group is proud to announce that Bazaar Meat by José Andrés, the acclaimed steakhouse concept centered around premium cuts and theatrical dining, will officially open this March in Washington, DC. With iconic locations in Chicago, Las Vegas, New York, and openings planned for Miami and Los Angeles this year, Bazaar Meat has become one of the most celebrated modern steakhouse concepts in the country. The restaurant will debut in the space currently home to The Bazaar by José Andrés at the Waldorf Astoria Washington DC, located within the historic Old Post Office building.

This opening represents a natural evolution of the Bazaar experience in the nation’s capital and a meaningful continuation of Chef José Andrés’ longstanding connection to the iconic landmark. Building upon the creative spirit, imagination, and beloved dishes that guests have come to know from José Andrés Group, Bazaar Meat will bring the full breadth of the globally celebrated steakhouse concept to Washington, DC. Guests can expect an expanded menu, deepened focus on cooking with fire, and new signature experiences alongside familiar favorites.

“I’m incredibly excited to introduce Bazaar Meat to this iconic address on Pennsylvania Avenue, right in the heart of my home in Washington, DC,” said Chef José Andrés. “What can be more American than a great steakhouse? At Bazaar Meat, we celebrate that tradition while bringing influences from my native Spain, amazing meat producers, and that extra little bit of magic. This is about creating a place where people come together to eat, drink, and celebrate.”

Bazaar Meat by José Andrés is an elegant and imaginative celebration of exceptional meats, impeccable technique, and bold flavors. The Washington, DC restaurant will feature many of the signature dishes that have defined The Bazaar, thoughtfully reimagined within the Bazaar Meat format, alongside the concept’s hallmark offerings.

At the heart of the menu are Meats from the Fire, including large-format cuts prepared José’s way, such as Ribeye “Chuleton,” Bone-in New York Strip, and an extensive Japanese Wagyu program. A Whole Suckling Pig, prepared in the traditional Spanish style, anchors the experience for guests looking to dine communally. Signature Bazaar dishes — from Cotton Candy Foie Gras and José’s Taco to the Caviar Cone, a5 Wagyu “Philly Cheesesteak,” and Classic Beef Tartare — are complemented by a refined jamón bar, raw bar, seafood offerings, and vibrant vegetable dishes treated with the same care and creativity as the meat.

For those looking to experience the kitchen at its most adventurous, José’s Ultimate Tasting Menu offers a dramatic, multi-course progression curated by José Andrés and his culinary team. The beverage program is globally inspired and reflects both Bazaar Meat’s inventive cuisine and its iconic setting. Highlights include a signature Freezer Martini, crafted for exceptional clarity and balance, the Stamp Collector Sazerac, created as a tribute to the building’s history, and Ben Franklin’s Milk Punch, an ode to the Founding Father. The wine program remains a cornerstone of the restaurant, guided by a thoughtful philosophy that emphasizes Spanish wines alongside standout local producers from Virginia and Maryland, while prioritizing balance, sense of place, and seamless pairing with the menu’s bold flavors.

Bazaar Meat by José Andrés at Waldorf Astoria Washington DC will open for dinner service from 5:00 PM to 10:00 PM, Sunday through Thursday, and 5:00 PM to 11:00 PM on Friday and Saturday beginning this March. Brunch service will be available every Saturday and Sunday from 11:00 AM to 3:00 PM.”
