“The team behind Stable will transition their summer Pier 1354 seafood shack pop-up on the patio at Gallery O on H (1354 H Street NE) to a cozy fondue and hot cocktail-focused outpost of their authentic Swiss restaurant on October 1. The outdoor satellite location, Little Stable, will allow guests to enjoy some favorite items from the Stable menu in an in-person setting for the first time since mid-March (the H Street restaurant closed their dining room due to the pandemic). Little Stable will operate Thursday-Sunday from 5 to 10 PM until October 22 (may be extended, weather depending). [Ed. Note: It’s D.C. we gotta be good until at least mid-November?!? Damn, wear a sweater or something.]

Stable owners Silvan Kraemer and David Fritsche will swap out the beach balls and summertime seafood at Pier 1354 for blankets, heat lamps, and a menu of Swiss fare and cocktails. Little Stable’s menu will center on warm, comforting food with three variations of Stable’s signature fondue featuring a blend of Schlossberger Old, Schlossberger Young and Vacherin cheeses cooked with garlic and white wine. The national dish of Switzerland will be available as a Traditional Cheese Fondue; a Belper Knolle Fondue featuring an addition of a dried garlic and black pepper-studded Swiss cheese; and a Pear Fondue blended with pear purée and spiked with Pear Williams Schnapps. Shots of kirsch, also known as cherry fire water and often added to fondue, will be available to bolster the bubbling pots of cheese.

The fondue will be served with homemade white bread for dipping as it is traditionally eaten in Switzerland, but additional accoutrements will be available including potatoes, pickles and sliced apples. Guests can round out their meal with Swiss charcuterie including Air-Dried Beef served with mustard and pickles and Landjäger, a cured and smoked Swiss-style salami.

The cocktail list will offer warm drinks spiked with Swiss spirits including Glühwein, a warm, spiced red wine; Jägertee featuring Spiced Stroh Rum, hot water and lemon; Spiced Apple Cider enhanced with bourbon, Goldschlager and Cotton & Reed Allspice Dram; and Kafi Schnapps with Nescafé, sugar and a choice of plum, Pear Williams or Kernobst schnapps. The beverage menu will be rounded out with a selection of Swiss beers and wines as well as local labels.

Little Stable invites guests to cozy up under blankets on the patio outfitted with twinkling lights and heat lamps on Thursday through Saturday from 5-10 PM from October 1 to October 22.
