“Reverie is a New American restaurant now open in Washington, D.C.’s historic Georgetown neighborhood. Executive Chef Johnny Spero will feature an elevated yet accessible menu with global influences, allowing ingredients to shine in minimalist preparations. The 64-seat dining room is outfitted with clean, contemporary décor and features an a la carte menu. Reverie aims to remove the pretense and formality from traditional fine dining and make the entire dining experience more approachable and enjoyable. One of the more unique ways they plan to do this is by offering two “pay-what-you-can” seats that will be available once each night through the restaurant’s reservation page on Tock.

CUISINE: 

Reverie will offer a menu inspired by Executive Chef Johnny Spero’s time cooking in kitchens around the world, including stints at JoséAndrés’ Minibar, Noma, and Mugaritz. Guests can enjoy an a la carte menu of small plates such as Charred Cucumbers accompanied by ramp vinaigrette, boqeurones, and cured egg yolk; Scallop Crudo topped with buttermilk, dill, and dried scallop; and Ribeye with lovage, potato, and beef tongue — Spero’s take on a refined steak and potatoes.

LIBATIONS:

Reverie’s beverage program will focus on sherry and vermouth, paying homage to Spero’s love for Spain. The cocktail menu, curated by Columbia Room Beverage Director JP Fetherston, features inventive cocktails including Dutch Salute with By The Dutch Genever, Tio Pepe Fino Sherry, Mancino Secco Vermouth, koji, and orange cream citrate; and Handsome Fella with Amontillado and Palo Cortado Sherries, Imbue Dry Vermouth, orange & olive bitters. Guests can also enjoy a curated list of wines both by the glass and bottle as well as a selection of beer and ciders.

SPACE:

Reverie, designed by EditLab at Streetsense, sits tucked away down a cobblestone alley in one of Washington, D.C.’s oldest neighborhoods. The restaurant’s interior draws inspiration from Nordic design and features countertop seating wrapping the kitchen and bar to offer a view of the restaurant’s chefs and bartenders at work. The intimate dining room is framed by brass spotlights and floor-to-ceiling windows and opens the space to a leafy outdoor patio.
