“This Saturday we’re celebrating Mardi Gras with the launch of a new collab with David Guas of Bayou Bakery: the king cake kolache!

Combining our kolache dough with David’s signature cream cheese & cinnamon filling (as well as the traditional icing & tricolor sprinkles) the king cake kolache will enjoy a limited run ending with Mardi Gras weekend on Feb. 6.

Those who order a king cake kolache this week or next just may find a king cake baby hiding behind their kolache, which both constitutes good luck, and can also be redeemed for a free kolache at the register.

This is our second ‘Guest Chef’ kolache after a highly successful run of the brisket kolache (a collab with Rob Sonderman, then at DCity Smokehouse). Cajun flavors are no stranger to the kolache (especially in East TX), so tipping the hat to the hallowed king cake felt like an appropriate culinary celebration of our neighbors to the East.”

    Thanks for the heads up, I’m officially pre-ordered!
    Though I’m reserving judgment, I have to say I don’t have the highest hopes for these as compares to the traditional Polish kolacky I’m used to getting on Chicago’s south side. These look like stuffed dinner rolls, whereas the ones I’ve grown up on are 1/4″ discs with a giant circle of filling and copious amounts of powder sugar….

    Anyone had these or have thoughts on the best variants of kolacky/kolache?

      I was at Pub & the People last Friday and Republic Kolache came by and dropped off some of the test batch King Cake Kolaches. They were delicious (also fresh out of the oven, which was especially nice given we were in the throes of Snowzilla).

      I grew up in Texas, which is home to tons of Czech kolache dives. I can tell you that the folks at Republic Kolache (who are also from TX) are adventurous in their flavors, but the style & dough is very similar to the ones I had growing up.

      Maybe the Polish vs. Czech thing is why yours looked different.

      I just pre-ordered because of this! Haven’t tried Republic Kolache before. The idea of a mini King cake made me do it!

      We typically open up pre-orders for the week between Mon-Thurs, so unfortunately they’re closed for the week now. We’re having some issues with our pre-ordering platform currently, whereby it’s is displaying that error message at that link you provided– rather than our typical more descriptive language.

      However, you can certainly swing by our shop (917 V St. NW DC) between 10a-1p and pick up some kolaches (including the king cake variety). I’d recommend coming on the earlier end as it seems like we’re going to have lines out the door on Sat
