One of my favorite ways to eat lunch is also one that takes shape in nearly every country on earth: the sandwich. Take nearly any meat or cheese, some produce, and a local condiment, and two slices of bread, and you can make magic. The universal appeal of a good sandwich is undeniable—and one of the best ways to serve food from a truck as it maximizes convenience into something you can eat on the go. Although the nightmarish image of a week-old convenience store egg salad sandwich occasionally haunts me, I have a deeply-held love for this particular form of food, especially when it hails from a region I’m not familiar with—like the chivito sandwiches at Mojo Truck. It took time, and the help of a few friends, but when I finished making my way through the menu options, I was convinced that this review is far from the last time I will go searching for some sandwich mojo.

One of the first things you notice at Mojo truck is their sandwich ingredients: this is not your typical tuna salad on wheat. Each sandwich option comes with lettuce, tomato, cheese, and—wait for it—a fried egg. To make things interesting, you can upgrade to the Canadian—the standard toppings, plus thinly slice ham (on top of your meat option) and grilled onions. As if that wasn’t overwhelming enough, their “special” comes with all that AND avocado and bacon.

Sandwiches are filled with chicken, steak, pork, or cheese that has been grilled until it’s melted and slightly crispy. The mojo marinade they use on their chicken and steak is fantastic—it’s tangy and spicy and adds a ton of flavor to the meat. The pork is outstanding, with a smoky flavor not unlike smoked pork shoulder. My favorite combinations were the vegetarian Canadian and classic pork or steak. The combination of the mojo marinade and simple ingredients (lettuce, tomato, mozzarella, and the egg) were really delicious—each ingredient, and the marinade, stood out. The bread they use is also really excellent—fresh and spongy on the inside; it started to soak up the sauce from the meat while remaining crusty on the outside. My only complaint about the bread is that it was cut all the way through, rather than leaving one side attached, so ingredients fall out easily.

While I appreciate the saying, “Too much of a good thing is wonderful,” I’m not sure it can be applied to Mojo’s “Special” sandwich. Lettuce, tomato, cheese, an egg, ham, grilled onions, bacon, and avocado proved to be way too many different tastes on one sandwich. The first time I ordered it, my avocado didn’t make it onto the sandwich (a shame, at a dollar extra) but it didn’t matter because I wouldn’t have been able to taste it anyway. The mojo-infused meat was almost completely masked by the strong flavors of bacon, ham, and onion, as was the egg. I did like this combination better with just provolone cheese, but that’s because it was less messy and nothing was really competing with the bacon and ham. Overall, the $9 special might be far too much of a good thing, but their classic sandwich is really, really good—and well worth $7 for a HUGE sandwich that covered me for lunch AND dinner, and would be a good thing to split between two moderately-hungry people. The Earl of Sandwich has some serious competition from the King of Chivito.
