“Team Behind Service Bar Launches Peruvian Comfort Food Pop-Up ‘Criollo by Chef Carlos Delgado’ – TODAY”

“Beginning today, Friday, November 20th. 2020 at 5PM, the talented team behind beloved DC neighborhood bar Service Bar in Shaw – Glendon Hartley, Chad Spangler, and Chef Carlos Delgado – are thrilled to debut their new Peruvian comfort food pop-up ‘Criollo by Carlos Delgado’ located on Service Bar’s outdoor heated and covered patio space on U Street.

The pop-up is slated to run through the end of 2020 and will showcase quintessential and crave-worthy ‘criollo’ (Native Peruvian) – pronounced cree-oh-yo – dishes such as Sopa Criolla, Lomo Saltado, Cebiche de Pulpo, Papa a la Huancaína, Causa de Pollo, Pulpo Anticuchero, Tacu Tacu Con Camarones, Tallarín Saltado Con Vegetales, Arroz Con Mariscos, and Sudado de Mahi Mahi, amongst others. Chef Carlos Delgado, a native of Lima, Peru and formerly of notable DC-based Peruvian restaurants Ocopa and China Chilcano, will lead the culinary creativity for the pop-up, while the playful Pisco-inspired beverage program – heavily influenced and curated by Service Bar owners Hartley and Spangler – will place a heavy emphasis on showcasing a rotating assortment of Pisco-centric cocktails such as a Classic Pisco Sour, Mandarin Chilcano, a Pisco Punch, to name a few.

Debuting the new Peruvian comfort food pop-up ‘Criollo by Carlos Delgado’ serves as the beginning of a new food focus shift at Service Bar. With the owners – Hartley + Spangler – already working on several new food and beverage concepts with Delgado slated to open in the District throughout 2021, the creative ideas for the comfort food-centric pop-up concept developed organically. Instead of previewing the new line-up of food and beverage concepts in the works, Chef Carlos Delgado took the opportunity to utilize the pop-up to focus on highlighting and sharing iconic comfort food-centric dishes of Peru that are well suited for outdoor dining as well as takeout and delivery during the colder winter months.

“With almost 50 years of experience between the three of us in DC’s culinary scene – Chad Spangler, Carlos Delgado, and I – we are thrilled to bring the Criollo pop-up to life sharing some of our favorite aspects of beautiful and diverse Peruvian cuisine, cocktails, and culture”, said Glendon Hartley, co-owner of Service Bar.

‘Criollo by Carlos Delgado’ will be open Tuesday through Sunday, 5PM to 11:30PM offering dine-in on the heated and covered outdoor patio space, as well as for online orders for pickup and delivery.

Potomac Harmony is Back! Following a gap year of competing, then virtual rehearsals during the pandemic, followed by the well-earned retirement of our long-term director, a year of a director search, Potomac Harmony hit the regional contest stage in Concord, North Carolina in March for the first time since 2018! What’s next? So much! We now look forward to upcoming performances, growing our membership, and expanding our musical product with new arrangements and an education component each week. It’s an exciting time to be part of this ever-growing ensemble!
