Like most DC residents, I am obsessed with my blackberry. This one just happens to be the fruit and not the smart phone.

Ever since I picked up a basket of blackberries at the farmer’s market, I’ve been hooked. Some days, I’m lucky to get home with half the basket left. Blackberries are awesome, and this recipe for Blackberry and Mascarpone Waffles is even more awesome because it combines blackberries, cheese (which makes everything better),  and waffles (the superior breakfast pastry).

Blackberry and Mascarpone Waffles

Ingredients:
Fresh blackberries
Mascarpone cheese
Waffle mix
Optional: maple syrup

1. Make waffles according to the package. I used multigrain waffles from Trader Joe’s, but obviously you don’t have to be fiber-crazed like me and can just make regular waffles like a normal person.

2. This is the part of the recipe where you have to decide if you are a Sweet person or a Plain person. If you are Sweet person, you will want to mix the mascarpone cheese with maple syrup to make a sweet creamy spread. If you are a Plain person, well, if I have to spell this out for you, you should probably go back to being the non-breakfast maker of the relationship.

3. Break the waffles into quarters, and spread the sweetened or plain cheese onto the waffle.

4. Cut the blackberries in half. This is so they don’t roll around and annoy you while you try to eat them. Nobody wants breakfast to annoy them, especially when said breakfast squirts dark juices. Then arrange the berries on top of the cheese on the waffles. I arranged them nicely for your benefit here. My blackberry arranging also impressed my honey in the morning. It kind of feels wrong to impress someone when all I did was put blackberries on a waffle in a non-stupid way, but hey, it’s early so I’ll take what I can get.

Eat it and feel inspired to not check your email obsessively for at least an hour.
