“In celebration of National Pisco Day (July 24) I wanted to share the following details from José Andrés’ China Chilcano. This year, China Chilcano has partnered with top pisco producers including Macchu Pisco and Soldeica Quebranta for a special edition of “Pisco Hour.” The restaurant will offer cocktail demonstrations, complimentary pisco tastings and specialty menu items from 3-6 p.m. in the Marketplace bar.
Specialty menu items include $5 cocktails with chef-recommended small bite pairings like:
- Chilcano & Anticucho, Pisco 100, lime, Amargo Chuncho bitters & Fever-Tree Ginger Ale, served with skewer of tender chicken, peewee potatoes and ají amarillo
- Pisco Sour & Ceviche Clasico Spoon, Macchu Pisco, lime, egg white, Amargo Chuncho bitters served with a spoonful of the classic Peruvian ceviche made with red snapper, leche de tigre, sweet potato, red onion, cancha and cilantro
- Cholotini & Causa Limena, Refreshing cocktail made with Macchu Pisco, prickly pear, passion fruit, and lemon, paired with a bite of China Chilcano’s famous causa limeña
- Capitán & Atun Picante, Sour cherry pisco cocktail made with vermouth & Amargo Chuncho bitters, served with our Peruvian spicy tuna roll
