A reader passes on the sad news from Paste & Rind yesterday:

“I’m writing with some tough news.

After deep and painful consideration, I’ve arrived at the decision to indefinitely suspend bar operations at the end of this year and all operations in early 2026.

– We will have regular bar hours through December except for Christmas Day (Thursday 12/25), with our last service being Sunday 12/28.
– We will continue to operate our stand at the Trinidad Market through December and into 2026 as we work through inventory.
-We will also be at the Arboretum Winter Festival & Christmas Tree Sale 2025 this Saturday 12/6 and the Procrastinator’s Holiday Market on Saturday 12/20.
– Our last Trolley Club boxes will be picked up or delivered the first week of January.

To everyone who has supported me and patronized Paste & Rind over the course of this journey, thank you thank you thank you from the bottom of my heart.

There are too many people to list here to thank who gave me a chance, lent me fridge space, hauled gear, cut cheese, and embraced my vision of championing local, regional, and domestic artisanal cheese producers and bringing their craft to my city. I am eternally grateful for the opportunity and proud to say I feel I have done just that.

Over 5 years, I’ve pushed the business forward in so many ways- my first holiday boxes at Tastemakers Food Hall, joining the Petworth Farmers market, a cheesy residency at DC Brau, opening the bar on H street almost 3 years ago, the short lived but high intensity Union Market stall, Trolley Club growing to more than 100 members, countless cheese boards, an unknown count on glasses of wine – always humbled by the reception and enthusiasm I’ve found at each turn. It’s been one of the most challenging but also the most rewarding chapters of my life personally.

But I think I am most proud of the community that Paste and Rind has been able to foster. We’ve seen good times like birthdays, engagements, and first dates. And tough times when folks have paid each other’s tabs, exchanged meal train information, and reviewed resumes. Through hugs, tears, and kind ears, I set out to sell fancy cheese and wound up creating a space with real impact and meaning – this is what I’ll miss the most.

So please come see me behind the bar sometime this month for a few more hugs, wine, and of course a little bit more cheese.”
