Bully Spanish Steakhouse is now open inside the St. Gregory Hotel, introducing a neighborhood-driven Spanish steakhouse rooted in fire-forward cooking, generous hospitality, and a distinctly Washington, D.C. point of view.

At its core, Bully reinterprets the familiar steakhouse format through a Spanish lens. Live-fire grilling anchors the menu, with beef, pork, and seafood cooked simply and confidently, complemented by classic Spanish dishes such as patatas bravas, jamón and Manchego, fideuà, branzino, and picanha. Desserts like Basque cheesecake, flan, and churros round out an experience designed for sharing, repeat visits, and relaxed indulgence.

Leading the kitchen is Executive Chef Nick Sharpe, whose nearly two-decade career spans Washington, D.C., San Francisco, New York, and Las Vegas. A graduate of Johnson & Wales University, Sharpe has held leadership roles with the Mina Group, including Corporate Executive Sous Chef for multiple high-profile openings and Executive Chef positions in both San Francisco and Las Vegas. At Bully, Sharpe brings a disciplined, ingredient-driven approach that balances technique, fire, and approachability.

Designed as a true neighborhood restaurant, Bully serves hotel guests, West End residents, and diners from nearby Dupont Circle and Georgetown alike. The space offers a polished yet welcoming setting suited for weeknight dinners, celebratory meals, and lively evenings at the bar.
