“Fancy Ranch Amish Fried Chicken arrives in NE DC (1309 5th Street NE) to fill a joyful, flavor-packed pop-up void from the team behind Shilling Canning Company, open at Union Market. It’s husband and wife team, Chef Reid Shilling and Sara Quinteros’ love letter to the crispy fried chicken that’s rooted in the cult favorite- and reimagined to be more accessible to all, more fun, and bursting with crunchy personality:)
The concept was cooked up by two dads with serious chops: Shilling and hospitality veteran Sheamus Feeley. But at the helm is powerhouse entrepreneur Quinteros — co-founder of Shilling, James Beard Women’s Entrepreneurial Leadership alum, and the 100% woman-owner of Fancy Ranch.
While big sister Shilling Canning Company is rooted in upscale dining, Fancy Ranch is a chance to let loose. It’s casual, wallet-friendly and community-driven for finger-licking, chicken-loving folks from all walks of life, plus full of bold flavor — a celebration of comfort food done with intention.

The Menu:
At its heart? Whole Amish chickens from family-owned farms — fried for full-flavor, all-parts-of-the-bird joy. Expect:
Crispy fried chicken (thigh, breast, leg, wing)
A cornbread waffle riff on Shilling’s signature hoe cake (yes, with maple butter)
Fresh, fun sides like Aji Verde potato salad and classic slaw, a toast to Quinteros’ latin background
A sauce lineup to obsess over: Fancy Ranch (of course), hot honey, honey mustard, aji verde, and traditional hot sauce
Chef Reid Shilling is in the kitchen, seven days a week, Monday-Sunday, turning out some seriously craveable bites plus economically-priced cocktails- Fancy Ranch is here for good vibes, great food, and a summer full of flavor.
