This rugged, northern end of Spain is home to the fiercely independent Basque people. Their rich culture in food has given rise to some of the world’s most regarded restaurants, providing uncompromising, authentic flavors. The same can be said for their wines. Txakoli, or ‘farm wine’, is a delicate, slightly effervescent white. A traditional carbonic maceration keeps the flavors of Rioja Alavesa fresh and the texture soft, while other producers take on the region as place to make world-class reds.
