“Some bittersweet news today folks: after 5 very gratifying years, Republic Kolache will be closing up shop early next month.

From the first popups at American Ice in Aug 2015, to a wholesale business that placed kolaches on the shelves of Whole Foods & many local coffee shops, to the opening of our sister brick & mortar Republic Cantina — we’ve truly had a good run.

The rationale here is what you’d probably guess: the pandemic has caused a massive drop in our sales (namely on the wholesale side, which represented ~90% of our production). With many of our cafe & grocery customers closed, continuing operations is unfortunately just no longer sustainable. (more…)

“This weekend we’re opening up our new “Republic Kolache @ Reliable Tavern” to the public. We’re bringing our classic combo of savory & sweet kolaches and coffee, plus squeezed-to-order juices and fresh licuados (Mexican-style smoothies) into the Reliable Tavern space [3655 Georgia Ave, NW] each Sat & Sun morning, 9a-noon.

(For the uninitiated, kolache = Czech pastry with a cult following in Texas, consisting of a light slightly-sweet dough filled with savory or sweet ingredients)

We’ll have classic Texas tunes on the jukebox, and look forward to meeting our neighbors up in Petworth/Park View!”

  • new retail outlet: this Fri we’ll be launching our new weekend popup Republic Kolache @ Hill Country (after we wrapped up at American Ice and Union Market last month).     • the menu will include a number of our classic flavors as well as some collaborations including the new Jalapeño Sausage and Cheese kolache (with sausage imported from the legendary Kreuz Market in Lockhart, TX then finished in the smokers at Hill Country), as well as…
    • the Brisket Kolache is back! Our first run of the brisket kolache last year was a huge hit so we’re pleased to bring it back, this time with Hill Country’s moist brisket (and paired with scrambled egg & cheddar)
    • to celebrate every Texan’s favorite meat we’re offering a brisket kolache for free on our grand opening this Fri to the first 25 customers who present the ‘secret brisket password‘ after we open at 8a
  • Republic Kolache at Whole Foods: as of this morning, a selection of our sweet & savory kolaches are now available at the brand-new Pentagon City Whole Foods. We’re pleased to share billing with other local producers (including Erik Bruner-Yang’s Paper Horse) as Whole Foods kicks off their latest store
    • current flavors available are Tex-Mex Saag Paneer, Migas, Cherry & Cream Cheese and Lemon Berry, with some meat options available soon!
  • kolaches & brews at Right Proper: starting tonight we’ll be teaming up with Right Proper for a weekly kolache happy hour each Weds at their Brookland production house and tasting room (920 Girard St NE). We’ll be serving kolaches from 5-9p each Weds, alongside happy hour pricing on Right Proper pours at the bar ($4 pints, $10 growler fills)
Further out future: working on the brick & mortar, and then we’ll have a bunch of exciting new guest chef kolaches debuting over the summer (including a pastrami kolache by Marjorie Meek-Bradley, something delicious & veggie-centric by Matt Baker of the upcoming Gravitas, and a barbacoa kolache by Quinten Frye)”

“After kicking off our retail operation with a Saturday morning ‘residency’ at American Ice Co. last August, we’re pleased announce that starting this weekend we’ll be coming to Union Market!

We’ll be occupying a stall near the front of the market on Saturdays & Sundays (9a-4p) through early March (and possibly longer than that). With the consistent lines we’ve been seeing at American Ice (particularly after big flavor launches like the king cake kolache, DCity Smokehouse brisket, etc.) we’re hoping these extended hours will help alleviate the crowds a bit and offer all the kolache fans a convenient option to get their fix!

Saturday will also mark the launch of our poppyseed flavor– a very traditional Czech flavor and a meaningful one for me personally (was always my favorite flavor that my grandmother would make growing up). We also have some fun new guest chef flavors coming soon, including one with Nate Anda of Red Apron (conveniently a few stalls away at the market).

“This Saturday we’re celebrating Mardi Gras with the launch of a new collab with David Guas of Bayou Bakery: the king cake kolache!

Combining our kolache dough with David’s signature cream cheese & cinnamon filling (as well as the traditional icing & tricolor sprinkles) the king cake kolache will enjoy a limited run ending with Mardi Gras weekend on Feb. 6. (more…)

Republic Kolache’s website says:

“Kolache, noun • [koh-lah-chee]: a sweet pastry filled with delicious fruit or savory fillings. Originated in the Czech Republic, perfected in Texas, and available soon in the District.”

The owners tell me via email that their first two pop ups will be:

“in Bloomingdale and Arlington. We’ll also be hitting some of the local farmers/flea markets when spring rolls around as well as exploring wholesale options, then we’ll be figuring out our longer term retail plans from there.

Republic Cantina has finally soft opened (ish)!!!!! Thanks to Jonathan for teasing us this morning with these photos:

“I’m eating breakfast in my neighborhood and it’s amazing. Delicious and kid friendly.”

I’ve obtained an email from Republic Cantina that says:

“Note: we have not yet opened to the general public but wanted to give our loyal Republic Kolache fans a preview of what we’ve been working on for a couple years now. Stay tuned for the full launch news.” (more…)

“Zeke’s Coffee will officially open its second DC location next week. The store is located at 731 15th Street NW [formerly Pleasant Pops], just south of McPherson Square. Zeke’s will be celebrating the grand opening of its new location with free hot coffee and cold brew on September 12.

The downtown DC shop will feature a full menu of coffee drinks, including pour overs and press pot options, with food by Panorama Bakery, Republic Kolache, Paisley Fig and Broojies & Bier. (more…)

“Small Planes Coffee is excited to open the doors of our roasting facility to the public! In June 2017, Small Planes Coffee began roasting coffee at 2400 T St NE near the National Arboretum. We are now thrilled to welcome our northeast DC neighbors, Arboretum visitors, and coffee lovers throughout the region into our roastery on Saturdays from 9am-2pm

Each week, we will choose one coffee from our catalog to brew. That featured coffee will be on sale as a 12 ounce bag of whole beans at a discounted $9.99 price. Visitors will also be able to select from the rest of our whole bean offerings and home brewing equipment. We are currently pairing our coffee with sweet and savory kolaches from Republic Kolache.

Beginning on May 20, we will begin offering Roastery Tours and Tastings. (more…)
