“EatWell DC’s new restaurant and bar The Bird will land again at The Pig (1320 14th Street, NW) with a two-day pop-up on Saturday, September 17, 2016 and Sunday, September 18, 2016. The beak-to-toe preview will showcase brunch from 10:30 a.m. to 3:00 p.m. each day, as well as Early Bird At The Bar from 3:00 p.m. to 7:00 p.m.

Reservations are recommended, and can be made by calling 202-290-2821 or emailing [email protected]. Online reservations will not be accepted.

While the menu, crafted by Executive Chef at The Pig & The Bird’s partner Michael Bonk, is still in development, diners can expect a sampling of starters and breakfast meats such as amish chicken sausage and organic free range turkey bacon. A “Birdcuterie Board” will feature capon rillettes, duck prosciutto, pheasant galntine, mustards, pickles and toast. A clutch of egg dishes are also slated for the brunch menu, with items such as Duck Hash with a sunny duck egg, zucchini, squash, onions and duck jus, as well as a Smoked Chicken Benedict with brined, smoked, pulled amish organic chicken, poached eggs, yuzu hollandaise and biscuits.

The poultry-centric concept will showcase four seasons of fowl, as the menu will change four times a year with the seasons, sourcing vegetables from Eatwell DC’s EatWell Natural Farm in La Plata MD, and meat from local poultry producers. The menu is inspired by poultry dishes from around the world using chicken & capon, duck, quail, turkey, squab, grouse, goose and ostrich and all of their various parts and pieces, as well as their eggs. The Bird will hatch this October at 1337 11th St NW, DC at the SE corner of 11th & O.”
