Right Proper gets new Executive Chef, Jim Jeffords, from Evening Star Cafe in Alexandria

“Right Proper Brewing Company in Shaw [624 T Street, NW] is pleased to announce Jim Jeffords as its new Executive Chef. Jim comes to Right Proper from Evening Star Café in Alexandria, where he has been Executive Chef for the past three years.

“Jim comes from the South and from a farming background, which squares sort of creepily with the farm-fresh food with a Southern accent that comes out of our kitchen,” said Thor Cheston, co-owner of Right Proper. “We are excited to have him as part of our team. At the same time, we’re really sorry to say goodbye to Chef Robert Cain, but he’s going to open a resort in Belize—we can only have so much sympathy for the guy.”

Growing up in Georgia, Jim spent his spare time on the family-owned farm in Moultrie. He attributes his love affair with food to his grandparents. They are responsible for not only inspiring Jim’s culinary dreams with their southern cuisine, but also getting him started in the restaurant business: Jim gained his first professional cooking experience while working at his grandparents’ restaurant in Florida.

After graduating from the New England Culinary Institute, Jim’s next kitchen role was at the three-star Catch in Boston. Jim’s roles in D.C. have included a five-year stint at CityZen under Eric Ziebold, and most recently relaunching the menu at Evening Star Café.
“I’ve always been a fan of pairing great food with great beer, so Right Proper just seems like a natural fit for me, “said Jim Jeffords. “When I first walked into Right Proper, it felt like a beer- infused ’20,000 Leagues under the Sea’ meets ‘Hitchhikers Guide to the Galaxy’ meets Dreamland BBQ.”
