Red Apron plans on opening their Penn Quarter location in 2013:
Built from the ground up to redefine the American butcher shop, Red Apron incorporates the best of American and European butcher, charcuterie, and salumi traditions while adding healthy doses of subversive attitude and fearless innovation. We will never compromise our ultimate goal: to serve you the very best meats and meat products—from animals that are sustainably raised without antibiotics or hormones and certified humanely treated—that we can source and create. This is Red Apron, and Red Apron’s coming to you soon.

I’ve had some of their stuff and it is great the Joy Division reference just makes me want it more.
