Back in April I mentioned that pho was coming to Glover Park. I’m excited to share lots more details I got from the owner:
We are officially Sprig & Sprout (Pho and Viet Sandwich Shop). The reference being all of our dishes are served with some kind of Sprig (basil, mint, cilantro) and bean Sprouts.
We are looking to open our doors for a soft opening around the beginning of September. During this time we encourage a lot of comments and suggestions to help us iron out any kinks.
The style of our restaurant is “Fast & Casual” but we wanted to keep options open to our guests. Our main floor has an open kitchen and is meant to be used for the quick eats. Here you can order in line, then watch as they prepare your food for take-out, or grab a table and a runner will bring your dishes to you. For anyone who wants to relax a little longer our upstairs fully stocked, laid-back bar provides full service.
Our hours of operation are everyday from 11am to 10pm.
I’ve actually just gotten back from a trip to Vietnam where I worked with two chefs to get a range of education. Hopefully I’ve gathered some good secrets!
Sweet – stay tuned for September!

I miss hearing the wild cats...
Sounds good to me. I hope they don’t try to “elevate the experience” ala Pho DC in Chinatown and charge $14 per bowl.
@Denizen. NO!
In time for fall cold season – YES!
who’s the owner?
What the District so desperately needs is a super authentic banh mi shop. i realize that these sandwiches are the annoying trend right now, but considering that Falls Church has numerous banh mi options, I think those of us in the city are long overdue. Add in some exotic bubble teas, and we’re all set!
