Strawberry Sour Cream Pie
1 unbaked 9 inch pastry shell
1 quart fresh strawberries
1 and 1/2 cups sugar
1 cup flour
1 cup sour cream
1/4 teaspoon salt
2 tablespoons sugar, reservedPreheat oven to 450 degrees. Rinse and halve berries. Place berries evenly in pastry shell. Mix flour, sugar and salt together in a medium sized bowl. Add sour cream and mix well. Spread mixture over berries evenly. Sprinkle reserved 2 tablespoons sugar over the top. Bake for 10 minutes. Reduce over to 350 degrees and bake another 30 minutes or until crust is a gentle, golden brown.
I find that the pie is best when served chilled but you could be the person who likes it served warm. I scored a boyfriend off of this pie.

Sounds great, but would’ve been awesome to have this recipe about 2-3 months ago when strawberries were in season.
Yes, I’ll definitely make this one next spring when the strawberries are back. It look delicious. For fall I highly recommend this Pear Gruyère Pie. The crust with Gruyère baked in is absolutely incredible.

Love those. I made something similar – cooked down some strawberries with a teaspoon of sugar and a tiny pat of butter and it was delectable, but I’d love to be able to do one of those cakes properly.
can this be made with rhubarb in addition to the strawberries?
